Passover: Matzo Pizza Recipe

While we know you all love matzo and the significance it holds for us over the 10-days of Pesach, we also realize it’s easy to run out of creative ways of incorporating these unleavened crackers into our daily meal routines. As a kid, we all remember groaning at having to eat yet another boring matzo peanut butter and jelly sandwhich by the middle of Pesach.

Here’s a recipe that is not only easy, it’s delicious and fun for the whole mishpacha! Get creative with your favorite sauce, cheese and all the toppings you love to throw on a pizza.

A note about keeping your matzo pizza from getting soggy: Layer the matzo with cheese, bake it for a couple of minutes, and then add your sauce and toppings. This ensures a crispy, delicious matzo pizza every time!

Matzo Pizza

Serves: 4

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients

  • 2 whole matzos (whole wheat or regular)
  • 3/4 cup grated part skim mozzarella cheese (or non-dairy vegan cheese)
  • Salt and pepper
  • 1/4 tsp. dried basil, oregano, and/or red pepper flakes
  • 3/4 cup marinara sauce (or 1.5 cups whole canned tomatoes, drained completely and chopped)
  • 2 tbsp. grated Parmesan cheese (or non-dairy grated vegan cheese)
  • Toppings of your choice

Instructions

  1. Preheat the oven to 500 degrees.
  2. Spread matzo on a large piece of foil. Spread half of the mozzarella cheese on the matzo. Season with salt, pepper, and any spices you are using.
  3. Place in the oven, directly on the rack, and cook for 3 minutes.
  4. Take out and add the sauce, remaining mozzarella cheese, and the Parmesan cheese. Add any toppings you may be using.
  5. Return to oven and cook for between 8-10 minutes until cheese is bubbly.
  6. Serve and enjoy!
